I got my act together two weeks ago and made several new recipes and actually had a PLAN when I went to the grocery store. I knew what I was going to make each night. {Side-note: That might be a first ever. I'd like to think I'm organized in my meal planning but I cannot lie. I'm not. I often, at 4:00pm, frantically pull a meal together because I just couldn't get my act together earlier in the day. But I'm trying to do better in this. Trying. It didn't work this past week. One for one. Not bad.}
And so, one of the yummy meals I made two short weeks ago, and again tonight, was called Thai Chicken Salad. And it was SO tasty. And pretty to look at.

Thai Chicken Salad
Ingredients:
1 package (16 oz) coleslaw mix
1/3 cup sesame ginger salad dressing
2 cups cubed cooked chicken
½ cup Thai peanut sauce (be careful that it’s not super spicy)
1 medium sweet red pepper, julienned
½ cup chow mein noodles
2 green onions, chopped
Instructions:
1. Mix coleslaw and sesame ginger salad dressing.
2. Place on large plate/platter
3. Mix chicken and peanut sauce and place on top of coleslaw/dressing
4. Top with red pepper, noodles and green onions
5. Serve immediately (serves 4 adults nicely)
So there you go. I do plan to bring it to parties and such this summer because a) it's easy to make and b) it looks so pretty. Try it and see what you think.
